I miss these family get togethers alot, since my parents moved to Ark. I'm a family person and I am trying to pass family traditions on to my kids. 1/2 Cup Butter 1 Tsp. Cinnamon 1/4 Cup Orange Juice 3 Eggs 1/4 Tsp Salt 1/2 Cup Southern Comfort {the alcohol bakes out, so this is safe for kids} TOPPING 1/2 Cup Chopped Pecans or Walnuts 1/2 Cup Packed Light Brown Sugar Drain yams or sweet potatoes, then beat till light and fluffy. Beat in remaining ingrediants. Put in 2 quart casserole dish. Mix nuts and brown sugar and sprinkle over top. Bake at 350 for 30 to 40 mins. This looks like pumpkin pie when cooked.

1/4 Cup Melted Butter 3 Tablespoons Flour 1 Tsp. Lemon Juice 20 Caramels {cut in half} 1/3 Cup Flour 2/3 Cup Sugar 2 Tsp. cinnamon 5 Cups Apples {peeled, cored and sliced} Milk or cream Prepare crust, set aside For taffy mixture, combine brown sugar, 1/3 cup flour and butter. Mix well and set aside. In large bowl, combine sugar, 3 tblspns flour, cinnamon, lemon juice:add apples and toss to coat. Transfer half of apples to pie crust, top with taffy mix and half of caramels. Repeat layers. Top with crust, cut slits in crust. Seal and flute edges. {extremely important or caramel leaks out all over} Brush with light cream or milk, cover with foil. Bake at 375 for 25 minutes. Remove foil and bake 20 to 25 minutes longer. I always bake this on a cookie sheet, as I have found no matter how well you seal the crust, the caramels leak. This is best served warm, and microwave reheats well.
